Pimento Cheese sandwiches

There's one down-home delicacy that remains steadfastly stuck in the South: pimento cheese. the basic pimento cheese recipe is just sharp cheddar, red peppers and mayo -- what's not to like about that?  The most "national" exposure pimento cheese receives is its yearly appearance as a popular sandwich choice at the Masters golf tournament in Augusta, Ga.,  We bought a tub of it at the grocery store, the gourmet kind that was kind of expensive but we wanted good cheese etc..  Brushed some olive oil on a piece of Wheat 5 grain bread, turned it over and spooned the cheese on it, oiled the second piece of bread then grilled it (with a panini pan).. it was absolutely Delicious...  I do recall as a youngster having pimento cheese before but not this good.

One of the local restaurants has a grilled pimento cheese and crab sandwich.  might have to try that soon..

We worked on signs again today.  moved back to site #10 as the new hosts are suppose to come in tomorrow.  its really dark on this side of the park...

heading to Savannah this coming weekend...
